Method
- Boil potatoes in salted water until fork tender (12–15 mins), drain and cool.
- Preheat oven to 425°F and oil a baking sheet.
- Place potatoes on tray with space between.
- Smash each potato gently to ½-inch thick using a glass or masher.
- Season with salt, garlic powder, pepper, and optional herbs.
- Drizzle with olive oil.
- Roast 50–60 mins until golden and crispy.
- Flip and roast 10 more mins to crisp the underside.
- Garnish with parsley and serve hot with sauce.
