Ingredients
  

  • 3 cups all-purpose flour plus extra for dusting
  • 1 ½ teaspoons baking powder or 1 teaspoon instant yeast
  • ¼ cup sugar
  • Zest of 1 large lemon organic preferred
  • ½ teaspoon ground cardamom optional
  • ½ teaspoon salt
  • ¾ cup coconut milk or regular milk/water, adjust as needed
  • 1 egg optional, for richer dough
  • 2 tablespoons melted butter or vegetable oil
  • Oil for deep frying

Method
 

  1. Wash and zest the lemon, avoiding the bitter white pith.
  2. Mix flour, baking powder, sugar, salt, cardamom, and zest in a large bowl.
  3. Add egg, coconut milk, and melted butter/oil; stir into a soft dough.
  4. Knead on a floured surface 5–8 minutes until smooth and elastic.
  5. Cover and rest the dough 30 minutes (or 1 hour if using yeast).
  6. Roll out to ½-inch thickness and cut into desired shapes.
  7. Heat oil to 170°C (340°F) and fry in batches 2–3 minutes per side until golden.
  8. Drain on paper towels and serve warm with tea or coffee.
