  • ΒΌ cup cottage cheese
  • 1 tsp butter or olive oil
  • Salt to taste, add at the end
  • Black pepper to taste
  • Optional: paprika garlic powder, chili flakes, or fresh herbs

Method
 

  1. Heat a non-stick pan over medium heat and add butter or olive oil.
  2. Blend or whisk eggs and cottage cheese until smooth.
  3. Pour mixture into the pan and cook, stirring constantly.
  4. Keep scraping the bottom to prevent sticking and ensure fluffiness.
  5. Cook to your preferred texture.....soft or firm.
  6. Season with salt and pepper at the end before serving.
