Cheesy Scalloped Potatoes

Ingredients
  

  • 4 cups Yukon Gold or red potatoes thinly sliced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/4 tsp ground nutmeg
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1 1/2 cups whole milk
  • 1 clove garlic minced
  • 1 cup shredded cheddar
  • 1/2 cup shredded Gouda
  • 1/2 cup shredded Parmesan
  • Chopped parsley optional

Method
 

  1. Preheat oven to 375°F (190°C). Grease a casserole dish.
  2. Toss sliced potatoes with salt, pepper, oregano, paprika, and nutmeg.
  3. In a saucepan, melt butter and whisk in flour. Cook for 1 min.
  4. Slowly whisk in milk. Simmer until thickened. Stir in garlic and half the cheese until melted.
  5. Layer half the potatoes, half the sauce, repeat. Top with remaining cheese.
  6. Cover with foil and bake for 35 mins. Uncover and bake 35–40 mins more.
  7. Rest for 10–15 mins before serving. Garnish with parsley if desired
