It’s a fast-food chain that’s become legendary for its simple menu, cult following, and, of course, the not-so-secret secret menu.
Today, I’m walking you through how to make your very own In-N-Out-style burger with animal-style fries from the secret sauce to the caramelized onions, burger patties, and everything signature.
Yes, you can absolutely bring that West Coast magic into your home.
The In-N-Out Sauce

The foundation of every In-N-Out burger is that creamy, tangy, slightly sweet sauce.
It looks like Thousand Island dressing, but it has its own distinct balance that keeps you going back for another bite.
Luckily, it’s super easy to recreate at home.
All you need is mayo, ketchup, yellow mustard, and a splash of pickle juice.
Don’t forget the chopped pickles for texture, plus paprika and garlic powder for that extra kick.
Once you stir it all together, you’ve got yourself a sauce that is so close. Make it ahead of time and let it sit in the fridge for a bit; flavors deepen, and taste even better.
Caramelized Onions
It’s not a quick process; you’ll be cooking them low and slow for at least 20 minutes, but trust me, it’s worth every second.
The entire process of proper onion caramelization takes almost an hour.


You’ll use a mix of red and white onions for depth, simmering them in butter and neutral oil until they’re soft, sweet, and golden brown.
But if you just have to use one type, then make it white onions. They have a higher sugar content and, for that reason, they caramelize better.
Red onions by themselves are okay, but they dry out and burn quickly
These caramelized onions aren’t just a topping….they’re practically the glue that binds the flavor experience together.
Add water when the pan starts to dry. It prevents the onions from scorching.
Add more when it has cooked out to prevent burning
The key is to avoid stirring them too often so they can actually brown and not have your pan too hot.
Proper caramelized onions really take patience, and no shortcut does them better than the classic slow way.
If you don’t wanna add water, then turn your heat down and ensure they are covered so moisture is really never lost.
The Patties
In-N-Out’s patties are famously thin but still juicy.
To recreate this, shape your ground beef into 4 equal patties, seasoning simply with salt and pepper.
When they hit the hot pan, here’s the trick: smear yellow mustard on one side before flipping.


That mustard sear caramelizes and creates a tangy crust that you didn’t even know your burger was missing.
On this step, turn the heat down to prevent the mustard from smoking because it really does!
Melt cheddar cheese (two slices per burger) right on top so it oozes into every crevice.


You’ll stack two patties per burger because they’re thin
The Bun

Use Brioche; they are fluffy and sweet.
Lightly brush oil onto the buns and the pan. Leave for 2-3 minutes, or until they start to brown. This will help give you that authentic, crunchy texture.
Procedure
Here’s the lineup for your burger build:






1. Slather sauce on the bottom bun.
2. Add a slice of fresh tomato.
3. Lay down a crisp iceberg lettuce leaf.
4. Stack on two mustard-seared beef patties with melted cheddar.
5. Spoon on a generous amount of caramelized onions.

7. Crown it with the toasted top bun.

Animal-Style Fries
It wouldn’t be In-N-Out at home without animal-style fries.
Start with crispy fries, whether you cut your own potatoes or use frozen, just make sure they’re golden and crunchy.
Top them with shredded cheddar (or even American cheese if you want that classic fast-food vibe), then pile on those caramelized onions.
Finish with a drizzle of the secret sauce, and boom: you’ve got animal-style fries.

Ingredients
- 3 tbsp mayonnaise
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 2 tbsp pickle juice
- 2 tbsp chopped pickles
- ½ tsp paprika
- ½ tsp garlic powder
- 2 medium onions red + white mix, diced
- 1 tbsp butter
- 1 tbsp neutral oil
- Pinch of salt
- 1 lb 450g ground beef (80/20)
- Salt and pepper
- 4 tsp yellow mustard
- 8 slices American or cheddar cheese
- 4 burger buns toasted
- 4 slices tomato
- 4 iceberg lettuce leaves
- 1 lb 450g fries (fresh or frozen)
- 1 cup shredded cheddar or 4 slices American cheese
- Extra secret sauce
Instructions
- Mix sauce ingredients, chill.
- Caramelize onions in butter + oil with salt, 20–25 mins.
- Form 8 thin patties, season, cook. Spread mustard before flipping. Add cheese, stack 2 per burger.
- Build burger: sauce → tomato → lettuce → patties → onions → sauce → top bun.
- Cook fries, top with cheese, onions, and sauce.
